If you suffer from hypoglycemia then baking in general is a no-go. It doesn't matter if it has zero sugar, it still has simple carbs like flour and it will produce the same insulin reaction as sugar does, but without a nice taste to enjoy.
Forget it. Either stick to savory cooking or enjoy the odd bit of sugar indulgence.
